how we make it
The process is what makes our bread better. 100% handmade with only the finest ingredients, our passionate process simply results in better tasting bread.
OUR 7 STEP PROGRAM
(For Making Bread)
Organic, unbleached flour is combined with natural sea salt, yeast and water, and kneaded by hand until a smooth, doughy consistency.
We allow our bread to rise for 24 hours, longer than most bakers, so that the yeast can fully ferment, developing flavor and a rich consistency. During this time, the dough doubles in size.
Rather than over-kneading the dough and giving it a tired texture, we simply fold in additional ingredients and shape it for the second rise.
4. SECOND RISE
Loosely wrapped in a towel, the dough rises for another 2 hours, doubling again in size.
5. WE BAKE IT
The bread is baked in a French style baking cloche in the oven until it reaches peak perfection.
6. IT COOLS
Waiting can be the hardest part, but right out of the oven the bread continues to bake as it sits on the cooling rack, for at least an hour before slicing.
7. WE WRAP WITH CARE
Each boule is treated like a masterpiece, made with the finest ingredients and baked to perfection. The packaging should show that. We wrap our bread in the finest unbleached parchment paper finished off with a raffia tie. Every detail matters to us!
